This Pistachio Cake is easy to make and taste great. The texture is wonderful and the taste is great, it is not overly sweet. You can leave the glaze off if you would like, but I think it really adds to the cake. The pistachio flavor also isn’t overwhelming; it’s subtle and delicious. This is the perfect cake for brunch and great with a cup of coffee!

Pistachio Loaf Cake
This Pistachio Cake is a winner and has a wonderful texture and taste. Great for any holiday or brunch and one you can make in an about an hour.
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 cup white granulated sugar
- 3/4 cup evaporated milk could use 2%
- 1/2 cup olive oil
- 1 1/2 teaspoons almond extract
- 1 cup of lightly salted pistachios chopped
Glaze Ingredients:
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Milk as needed

Whisk together the all-purpose flour, baking powder and salt in a bowl. In another bowl use a mixer to cream eggs and sugar.

Add milk, olive oil and almond extract and continue mixing. Combine the flour mixture with the egg mixture and mix until all ingredients are wet.

Stir in chopped pistachios except for 2 tablespoons. Pour mixture into a greased or sprayed 9 x 5 bread pan and sprinkle remaining 2 tablespoons of chopped pistachios on top.

Bake in a preheated 350 degree oven for 45 to 50 minutes or until center of cake tests done.

Add glaze below.
The glaze is optional but we think it is a great addition!
